CHICKEN TACO ROLL-UPS
I am always looking for new lunch ideas because I get so sick of salads and sandwiches, but have no time to cook something delicious. This is a yummy, easy recipes that takes just minutes to whip up. And it’s pretty healthy too so I don’t feel gross after eating it, and it keeps me full on busy days!
INGREDIENTS
  • 3 chicken breasts (shredded)
  • 1 -8 oz. package fat free cream cheese
  • 1 cup Mexican cheese
  • 1/3 cup salsa
  • 4 green onions
  • 1/2 avocado (diced)
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic
  • 1 teaspoon garlic salt
  • Salt and pepper to taste
  • 6 tortillas
INSTRUCTIONS
  1. In a bowl, mix together, the shredded chicken, cream cheese, Mexican cheese, salsa, and onions with a hand mixer.
  2. Add the diced avocado, taco seasoning, and garlic, garlic salt, salt and pepper, and mix at a slow speed.
  3. Spread a thin layer over a tortilla and roll the tortilla up.
  4. Cut into 1 inch bites.
  5. Refrigerate until ready to serve.
