Turkey Taco Stuffed Avocados with all the Goodies are a Clean Eating Winner!
Taco Tuesday Sends a Terrible Message To Our Children. They Need To Know That Tacos Are An Option, No Matter What Day It Is.
Ingredients
  • 4 medium avocados halved, pits removed
  • 1lb. lean ground turkey
  • 1/2 Tbsp chili powder
  • 1/2 tsp ground cumin seed
  • 1/2 tsp dried oregano
  • 2 fresh garlic cloves, minced or pressed
  • sea salt and pepper to taste
  • 4 ounces tomato sauce
  • 1/4 cup shredded cheese
  • 1/4 cup cherry tomatoes, sliced
  • 1/4 cup lettuce, shredded
  • 1/4 cup Greek yogurt
  • a small bunch of cilantro/parsley, chopped
Instructions
  1. Preheat a non stick pan or skillet over med-hi heat.
  2. Add the ground turkey and cook until browned breaking the meat as it cooks with a wooden spoon.
  3. Add the spices, minced garlic, sea salt & pepper, and tomato sauce.
  4. Stir to combine and cook for about 3-4 minutes more.
  5. Remove the pit from the halved avocados and spoon out some of the avocado to make a bigger hole if needed, if pit was small. (keep the scooped out avocado flesh for making guacamole...because guacamole 😍)
  6. Squeeze fresh lime or lemon juice over them to prevent them from browning.
  7. Load each avocado half with taco meat, then top with cheese, tomatoes, lettuce, cilantro/parsley and Greek yogurt. Enjoy!
